Healthy Meal Prep Monday
It’s Monday, and I’m sharing with you my Healthy Meal Prep results!
Meal preparing is something that I have done off and on for the last ten years. I first got into freezer cooking and would make meals that would go into my freezer that would last us for a month. It was great, but it just took an incredible amount of time to accomplish. Now that I have three kids and a part-time editing gig (more on that soon!), I can’t make the once-a-month freezer cooking work for me.
Preparing lunch and snacks for a week, though, is not impossible! It seemed reasonable to do my meal prepping on Sunday afternoons. So, that’s what I did. I also created a new dish! The recipe for that will be up this week. I think you’ll love it!
Cheesy Chicken Vegetable Medley
I’ll share with you later this week my inspiration for creating this recipe. It is a low-carb Trim Healthy Mama S Meal that I am super pleased with.
Planned as part of my lunch meals for this week, the Cheesy Chicken Vegetable Medley should reheat well, and it will be a hearty lunch meal that will keep me going through my busy days.
The recipe that I created will serve four. Naturally, I already ate one serving (I had to try it out, people!), so I have three servings to spread over the week.
Coupled with the Cheesy Chicken Vegetable Medley, I included some fresh strawberries and raw broccoli that I will dip in homemade ranch dressing.
Sandwich Wraps
For the last two lunches this week, I prepared sandwich wraps made with Joseph’s Lavash bread. It is a low-carb flat bread/tortilla type bread that makes great sandwich wraps and thin-crust pizzas. It is a staple in my home!
On my sandwich wrap, I added a Laughing Cow Spicy Pepper Jack cheese triangle, mustard, iceberg lettuce (holding off on Romaine until this recall passes!), and turkey deli meat.
To make the sandwiches into meals, I included carrot slices and apple slices for one day and a small orange for the other day. These sandwiches, carrots, and fruit will give me a good THM E meal.
This will make my lunch days so much easier! I’m so excited to be able to just open my refrigerator with little to no preparation.
Snacks
I try to only eat one snack a day unless I am super busy, get hunger pangs, and need to fuel my body.
I didn’t photograph the snacks I have planned, because half of them aren’t put together yet. I’m getting groceries later this week, so I plan on making Briana Thomas’s Strawberry Delight once I have more staples on hand.
In the meantime, I have made two Brianafinger Bars and a snack-sized container of cashews and Lily’s sugarfree chocolate chips. These three snacks should provide enough fuel between lunch and dinner.
