Did you know that today is National Pistachio Day? It is! I love pistachios, and thankfully they’re a guilt-free treat as long as I eat them in moderation. π
Here are some neat facts about pistachios:
- They’re full of fiber – one serving of pistachios gives you as much fiber as you’d get from eating 2 plums!
- It is one of only two nuts mentioned in the Bible (Genesis 43:11).
- It takes at least eight years before the first crop is ready. After that time, it’s able to bear fruit for centuries!
- Making them a regular part of your diet can lower bad cholesterol and raise good cholesterol.
- They’re a good source of vitamin B6, thiamin, magnesium, and manganese.
If you’ve never tried them before, take a chance! To me they are similar in flavor to sunflower seeds, so if you like those, you may like pistachios, too!
