Who doesn’t love some good potato soup? Potato soup has always been a part of my life. When I began eating the Trim Healthy Mama way and cut down on how much I consumed white potatoes, it was hard. Cauliflower is a good replacement for potatoes, so I’ve eaten a lot of cauliflower. However, the healthy cauliflower soup recipes that I’ve tried are great, but I have felt like something was missing.
This month my inspiration arrived. A lady from my church made some potato soup that tasted amazing. She explained what was in it, and all I could think was, “I can THM that.” So, with a little tweaks, some added ingredients that I already KNEW would make it even better {nutritional yeast!}, I began cooking.
My results were pleasing, and now I want to share the recipe!
This was so easy to make, and I am thrilled with the results. The blended onion and celery, along with the cream cheese and the cauliflower, gave the soup a hearty thickness that was very pleasant. Top it with a little bit of the bacon of your choice, and this healthy cauliflower soup is even better.

The Nope-Tato Soup recipe can easily be enjoyed with S Meals. Enjoy with a meat and veggies of your choice or have a Cobb salad with ranch dressing with your soup!

Nope-Tato Soup is delicious partnered with a lean deli meat sandwich on sprouted bread. Because the soup is FP, you can even add some fruit to the meal.

Nope-Tato Soup
This no-potato soup is a delicious, creamy, healthy comfort soup that even Grandma would approve of. This is a Trim Healthy Mama Fuel Pull {FP} soup!
Ingredients
- 36 oz Cauliflower
- 4 oz 1/3 Less Fat Cream Cheese
- 1/3 c Carrots, finely shredded One carrot was all I needed.
- 1/3 c Yellow Onion divided
- 2 Celery Stalks, medium-sized
- 14 oz Chicken or Vegetable Broth
- 5 c Water
- 1/4 tsp Black Pepper
- 1 tsp Mineral salt, optional
- 2 tbsp Nutritional yeast, optional
Instructions

Put all cauliflower into a soup pot and pour in about 5 cups of water. Boil until tender.

While the cauliflower is boiling, finely shred carrots.

Chop celery into small pieces.

Chop onion into small pieces, measuring 1/3 cup.

Once cauliflower is tender, spoon out half of the cauliflower and a little of the water and place into blender. Add the cream cheese, celery, and half of the chopped onion to the blender. Blend for two minutes or until all ingredients are well blended.

Add salt, pepper, Nutritional yeast, broth, shredded carrot, the remaining chopped onions, and blender ingredients into the soup pot. Simmer for 15-20 minutes, stirring frequently. The soup will become thick, so you don't want anything to stick on the bottom.
